Did we skip summer?


What month is it? Looking outside the past two days I would guess February or maybe March but not mid April. Come on Mother Nature you are killing me! We haven't seen the sun in days and I am suffering. Yesterday I ran in wind and sleet with frozen hands despite the mittens that should be more than adequate and spent the afternoon cuddled in a blanket next to the fire trying to warm up, my own naptime :)

I know we are not the only ones with this never ending winter but enough! The combination of allergies and winter is too much. I can't wait to wear shorts to run, enough of this 30 minutes to get all ready to go out for a run. Hats, mittens, jackets and tights have done enough and need a break. My poor kiddo keeps asking when we can go to the beach, sorry there is still ice on the lakes. The heat in our house has been on since October with no indication of being turned off anytime soon. Not looking forward to my commute this morning as the snow continues to fall.

Enough complaining as I try to convince myself it truly is spring with our baking adventure the other day. My poor kiddo with her ear infection asked to baked and I couldn't say no...

Pineapple Coconut Oat Muffins
2 cups flour (I did 1 1/2 oat + 1/2 almond)
1/2 cup oats
1 tsp baking soda
1 tsp baking powder
1/2 cup shredded unsweetened coconut
¼ cup almond milk (Other milk would work)
1 cup dates soaked in water
1 small ripe banana
1 can crushed pineapple with juice
1 tsp vanilla
Shredded coconut

Puree banana, dates and vanilla in food processor, Mix flours, oats, coconut, soda and powder. Add banana mix and pineapple into dry and combine. Pour into muffin papers and top with coconut. Bake 15-20 minutes at 350F

  2. I think we're barely missing this final (I hope!) round of snow, but it is way too cold for April! Glad I'm headed off for a sunny vacation spot soon!

  3. Girl - we went from winter to 85-90 - it got too hot TOO fast! I just want spring! Hopefully it'll warm up for ya'll next week and cool down here!

  8. Ahh I thought we had terrible weather living in WI...I don't know where you're living but that looks awful! We've been having rain for like 4 days straight though...and only 37. Not that much better. :/

  9. I'm feeling you. What's worse (maybe) is the teasing that Missouri does. One day 70 the next day 30. I have zero clue what's happening on a daily basis. And to top it off, I've discovered that I prefer running outside but I still hate the cold. I'm not as brave as you! (Yet).

  11. i totally agree with you! and i'm tired of complaining about the weather - but it's been SO AWFUL!! no sun, cold, wind, rain, and possibly even snow today. i am just as eager for summer as you.
