As I have mentioned many times on here, I am vegetarian bordering on vegan, and love it. I feel great, have less health problems and still get plenty of protein as an endurance athlete. Give it a try, see how you feel, 1 week only. Check out the Recipe Section on my blog or Jill's for meal ideas.

This is a low key and no pressure challenge. And more importantly no guilt.
Watch for blog posts this week and final challenge details to be announced on April 21. Did I mention that we have prizes? Yes, a little extra motivation generously provided by out sponsors.

Now on to my weekly menu, I feel like I am getting into a meal rut, I think a lot has to do with the lack of nice weather. I want to move on to warmer weather foods but it stays cold. Trying a couple new recipes this week in hopes of changing things up a bit. How do you get out of a meal rut?

Breakfast
GF Flax Muffin with Almond Butter

Lunch/Dinner
Black Bean/Sweet Potato Burger & Roasted Potatoes
Grilled Eggplant with Mashed Cauliflower & ?
Veggie Bean Crockpot Meal (Based on Recipe)

Snack
Veggies and Hummus
ProBar
Apples with SunButter
Brown Rice Cakes with Almond Butter
Granola with Almond Milk Yogurt

  1. Love the idea of a vegetarian challenge! Hmm, good question about ruts. I guess I try to mix it up enough every week that I don't have a chance to get tired of anything in particular. Hope you get warm weather to stay soon!

  3. Woohoo! I've been wanting to go veg (again -- have been both vegetarian and vegan in the past) and this is exactly what I need to get me back on track. I feel so much better without the meat and a challenge is always helpful.

  4. A vegetarian challenge? What a great idea! I usually peruse my favorite cooking blogs for new meal ideas when I find myself in a rut. I try to experiment with a new one each week!
