Menu Planning 12/16 & Quinoa Mac n Cheese

We are going on week 4 of gluten free for O and seeing minimal changes: 3 weeks down and 1 to go before I make a decision about this. Poor kid is making the connection and frequently asked "why my tummy not better, I'm eating gluten free?" Sorry baby girl I wish I had an answer :(
Here is our plan for the week as we are entering the crazy holiday season!

A new recipe that is a requested one already here. I think I might even put this on the Christmas menu!
Quinoa Mac N Cheese
1 cup uncooked quinoa
2 cups water
2 roasted bell peppers diced
1 can black beans rinsed/drained
2 cloves minced garlic
2 tsp cumin
1 tbsp hot sauce (or less)
1 cup corn
2 cups cheddar cheese
½ cup plain Greek yogurt
½ cup rice milk (or other milk)
½ cup breadcrumbs
Cook quinoa and water just until tender or slightly under done. Mix cooked quinoa, beans, peppers, garlic, cumin, hot sauce, corn and milk. Then add in yogurt and cheese. Put in greased baking dish and top with breadcrumbs. Bake in preheated 350F oven for 20-25 minutes.

We have similar meals- I love all the stews, black beans, etc this time of year. The quinoa looks so good! Might have to add that to next week's menu.

DeleteThat looks good! I'll have to use a recipe I have for a really good vegan cheese sauce and come up with a sub. for the yogurt, but I may try this, as my pantry is filled to the brim with quinoa. :)

I have used nondairy cream cheese (tofutti) or soy yogurt before. The Daiya cheese works well too. Can you share the cheese sauce recipe? I try to avoid dairy but am lacking good options so I cave.
