2/3 Menu Planning


Linking up with Jill and Laura for menu planning as we get back on track with staying accountable to our plans. The food rut did improve slightly but why is it that Saturday means having no idea what to eat despite planning?.Does this happen to anyone else? Last week we added in my new lentil quinoa stuffed peppers and this week it will be cabbage rolls.

Monday: A version of these Cabbage Rolls
Tuesday: Sandwich pre-run
Wednesday: Black Bean Burgers and sweet potato "fries"
Thursday: Leftover Lasagna Casserole (freezer meal)
Friday: Spinach Chickpea Curry
Saturday: Dinner out with college friends

Lentil Quinoa Stuffed Peppers
Pre-cooked version, sorry too hungry to get a picture later!

1 onion diced
2 cloves garlic minced
1 cup dry lentils
½ cup uncooked quinoa
2 cups water or broth
1 tsp cumin
2 tsp chili powder
2 cups salsa or diced tomatoes
4 bell peppers
1 cup shredded cheese (optional)


In large pan heat oil and sauté onion and garlic until soft. Add in lentils, quinoa, spices and water. Cook 20-25 min until soft. Add 1 ½ cup salsa and simmer about 10 minutes or until peppers are ready- cut off tops and clean out seeds and ribs. Fill each pepper with filling (might be leftover filling which is great alone or as taco filling) and top with cheese if desired and put in glass baking dish. Pour remaining salsa in baking dish and bake in 350 degree pre-heated oven for 25-30 minutes.

I decided to no longer combine my menu and marathon training posts even though I see a huge connection between the two. Now that I am back to training I am going to start "Marathon Monday" posts to focus on marathon training and running questions. Happy Super Bowl Sunday! Are you planning to watch the game or like me only watching for the commercials and half-time? All right I'm off to run 16 miles in sub 0 weather...come on Mother Nature make it stop!

  4. I wanna try those peppers, quinoa is not my favorite but those look great! I'm trying to eat better too, it's not easy especially when the weekend rolls around..

    1. The quinoa mixes in a you can barely tell it is in there. I bet brown rice would work too.
