What's on your menu for the week? Any good squash recipes?
Here it is (even though it is not on the menu this week) the yummy gluten free pizza crust I keep talking about!
Gluten Free Pizza Crust (makes 4 large crusts)
2 Tbsp baking powder
2 ¾ c Rice Milk (room temperature)
4 tsp Olive Oil
4 tsp Lemon Juice
Pre-mix these dry ingredients in medium mixing bowl:
3 c Rice Flour (I do 2 brown rice and 1 white rice)
2 c Corn Starch
4 tsp Xantham Gum
1 tsp Salt
2 tsp onion powder
2 tsp Garlic Powder
2 tsp Oregano
2 tsp basil
Create a hole in the dry ingredients and add the liquid mixture. Stir until well mixed (will be sticky). Divide dough into 4 portions (or more depending on size). Coat pans with cooking spray in the pan and then sprinkle a bit of rice flour on top of that. Hand flatten the dough and let sit for 3 4 minutes after spreading the dough. Using a dinner fork, poke holes in each crust to prevent large bubbles from forming. Cook in 450 degree oven for 5 minutes. Let cool.
Stack the crusts on top of each other. Apply weight (approximately 5 pounds) to the stack for about 10 minutes. This keeps the crusts edges from curling up. At this point crusts can be separated and individually frozen.
To Make A Pizza: Add your favorite sauce and toppings.
Bake at 450 degrees until it looks done 8-12 minutes.
Yum! Thanks for sharing that crust... neither of us are gluten free, but it sounds so good. And we have the same plates! Have we discovered that before? :)

DeleteI'm planning a pumpkin and apple soup for tonight!! Wonderfully seasonally I thought! I've made it before and it was delish' but I can't find the recipe so tonights version may or may not be worth sharing!!! ;-)

DeleteHey where do you get your GF tortillas (saw the link for the black bean quesadilla). And dairy free cheese? Whole foods? I am afraid to try the DF cheese...is it processed junk? (I know you are super healthy though, so it must not be!). I've seen it, but never tried it. Just been doing without dairy.
ReplyDeleteSome DF cheese is nasty! The Daiya isn't bad but I try to avoid a lot of it and have been adding dairy back in in small amounts. The GF tortillas are http://www.foodforlife.com/product/tortillas/brown-rice-tortillas I find them at Whole Foods or any other co-op or similar store.
