Here we are again at the time of the week for meal planning and food prep. Last week I did another sugar detox week (until Saturday post-marathon when the diet Coke called my name then glass of wine just had to be drank J). I deserved it after finishing grad school and a marathon. Back on track today after I eat my Mother’s Day cupcake. What are your plans for Mother's Day? Any new meals this week?
Roasted Pepper Quesadilla
Black Bean Burgers and Sweet Potato Fries
Roasted veg/ potatoes mashed cauliflower
Dinner out with friends
Pre-run SunButter Toast
Salad with veggies and edamame
I never stick with snack planning and with it being post marathon week I know it won't go well so that is out this week. I am allowing myself this week to indulge then working on even better nutrition for my next training cycle.
On Friday my poor little O had yet another blood draw and as a reward wanted to make cookies, perfect since I had some pumpkin to use up. Here is what she came up with…They are a little soft but taste great and healthy!
Pumpkin Apple Cookies
2 tbsp Sun Butter
1 small apple diced
2 tsp pumpkin pie spice
1/2 cup oats
2 tbsp flax
1/2 cup raisins
1/2 tsp stevia (or 1/4 cup sugar or leave out)
Mix all ingredients, drop by spoonfuls on prepared baking sheet and bake 10-12 min at 350 degree pre-heated oven (makes 12 cookies)
