Free Friday: Food, Olympics, pilates and running

As I mentioned earlier I did my first pilates reformer session on Monday, I have done plenty of mat classes but this was new and different. Pilates helps runners to recover faster and stabilizes core and spine while helping to improve strength, flexibility and range of motion. I was impressed by the amount of stretch I was getting and even the difficulty of the exercises which I never expected. I love the core work too! Not sure if I will continue since it doesn't fit into my schedule as well as the mat classes, but will for sure do it again.

In other fun news I a was recently chosen to be a Sweat Pink Ambassador and yesterday my tank and pink shoelaces arrived in the mail!

The heat returned this week so we decided to take advantage of this and make some ice cream and it turned out amazing, everyone loves it! For the moms, it would be good with a little rum added too :-)

Pineapple Coconut Ice Cream
1- 20 ounce can of crushed pineapple
1- 13.5 ounce can of lite coconut milk
½ cup date paste: simmer ½ cup pitted dates in ½ cup almond milk or water and puree

1 tsp xanthan gum (for creaminess)
Optional: add sugar, stevia or other sweetener


Directions
In a blender mix all ingredients together until smooth. Taste the mixture before placing it in you ice cream maker and decide if you need to add sweetener. Then pour mixture into your ice cream machine and mix.


August Challenge Day 3: Where would you like to be in 10 years? Wow this is a tough one! In 1o years  will be in my 40s and want to have finally figured out what I want to be when I grow up! I hope to still be racing, coaching and my bucket list goal is to complete an Ironman when I turn 40 (6 more years). I will have a 12 year old child at this point who I want to be enjoying her life and excelling in whatever she does. I stayed up watching the Olympics last night and kept thinking that could be my girl some day if she continues with her love of gymnastics.

Speaking of Olympics I keep thinking back to Winter Olympics 2010 when I had a newborn who did not sleep. What great timing to be awake in the middle of the night, we got to catch a lot of Olympics I wouldn't normally see thanks to someone who thought night was party time! At that time I joked I would time my 2nd child for Summer Olympics 2012, well that obviously didn't happen!

  1. Your ice cream looks sooo good. And congrats on becoming a sweat pink ambassador! It sounds like an awesome group of ladies. Our fun weekend plan is me flying solo with L to Pa... not really so fun at all. But should be fun once we get there!

  2. That ice cream looks great! My Dad has an ice cream maker and every time I go home we make some, no matter the season! We haven't tried doing it with coconut milk though, although I have heard great things about it!

  3. I love pilates! My abs were in the best shape ever when that class was a part of my routine. My current gym doesn't offer it, but I do have a video that I should start back up:)
