12/9 Menu planning & updates



I decided I needed to get back in this habit of meal planning, so I am back to linking up with Laura and Jill who are hosting a weekly menu planning link up every Sunday. Check out their posts to see what others are making and find more healthy meals. We are going on week 3 of gluten free for O and seeing minimal changes: 2 weeks down and 2 to go before I make a decision about this.

Meal and workout planning are also part of the Elf 4 Health Holiday Challenge. Each week there are daily challenges around working out, healthy eating and general wellness. I am also participating in Runner's World Run Streak and on Day 18! I am working to be smart and some days the run is only a short, easy warm up for a different workout. What holiday challenges are you participating in?

Weekly Workout Plan
Sunday: Long run 12-14 miles (either through 2 feet of snow on on treadmill)
Monday: Short run before strength workout with trainer
Tuesday: Morning spin class & evening run
Wednesday: Short run before strength workout
Thursday: Morning Zumba (1st class, excited to try it) & evening run
Friday: Morning spin class & afternoon run
Saturday: Morning run & afternoon strength workout

  2. I had to stop the running streak because I've been having serious pain in my hip. I'm going to start walking again but I'm not sure about running just yet. Also doing Elf for Health.

    I'm not gluten free but I have two cousins with celiac disease. I read recently (and this is not good news, sorry) that it takes 6-8 weeks before gluten leaves your system and you start seeing a difference and then another 6-8 weeks for your body to heal from the gluten. Not sure why you're going gluten free (I must have missed that somewhere along the line) but perhaps if you guys can just stick with it O will see some results down the line.

    1. Thanks, my 2 year old has a lot of GI issues and this is my last thought since the doctor has no idea. I am gluten intolerant so I figure I'd try GF with her too.
