Weekly Menu Planning 10/7

As I head out to run (and hopefully not freeze) marathon #20 I am already thinking about food. Such a busy weekend that the planning has taken a step aside, but luckily I have a good start.  I am starting small with only dinner (breakfast tends to be the same and lunch is usually leftovers) and add in snack planning as I go.
Last week was good, we stuck to the plan even when I would forget, it was nice to have things written down to look back on.

DINNER
SUNDAY

Pizza: HM brown rice crust with veggies (yes a repeat but great post race food)

MONDAY

Dinner out for Indian
TUESDAY

Almond Butter on Spelt bread (quick dinner before running)
Fruit
WEDNESDAY

Roasted veggies, potatoes and beets, ?
THURSDAY

FRIDAY

Dinner out for UofM Homecoming
SATURDAY

Dinner at a friend's wedding

Snack Ideas: Homemade pumpkin granola, almond milk yogurt, veggies & hummus, ProBar (look for a giveaway coming soon!), fruit
Yikes writing that out made me realize we are eating out a lot! I figure post marathon week I can indulge a little more, right?!

Check out what others are planning and link up with Laura and Jill who are hosting a weekly menu planning link up every Sunday.

    1. I've been buying it from Trader Joe's, pretty good but dense.
